A perfect visitor experience would include warm and friendly service, a top-notch wine, a magnificent cheese board, (prepared fresh from a knowledgeable monger), and ending with a visit to our cases to get a little something to go home with (other than some brand new knowledge about cheese to impress their friends with..)
What is the story behind how you started The Fox and the Crow?
I have a passion for cheese and education. I wanted to open a cheese shop that celebrated cheesemakers and be able to tell their story while supporting this very important (and delicious) art form. We thought we should also serve some gourmet sandwiches...and thus the bistro was born. Seven years and a new location later, we are still telling stories at the counter.
What is your background? Tell us about yourself leading up to this point in your life.
I grew up in NYC and have enjoyed specialty cheeses all my life (really all cheese). As an art history major, I have found there has been a parallel between cheese and art study. Art is relative, you can love Rembrandt and dislike Picasso, cheese is the same way: one can love a blue and dislike alpine. Studying art and cheese is one and the same: the artist is the cheesemaker, medium, the make, and the title, the name of the cheese. Cheese and art history also both predate written history, which I also find fascinating.
In what ways are you implementing sustainable practices into your business?
We use eco-friendly to-go containers, and use paper rather than plastic, when we can. We switched from plastic to paper straws years ago. We source a lot of our menu items locally. On a broader level we source our cheese and meat from smaller companies, and celebrate the ones who use sustainable, and sometimes organic practices.
What do you love about the Fort Collins community?
That it is truly a community. Whenever we have been in trouble, or have had success, fellow business owners and customers alike have been there for us, as we have been there for them.
